It breaks my heart to read the comments about the cheese factory. My mom's family were the Stallmans, the people who owned and ran it. Believe me, every one of us misses it too! My grandparent's house was right next door, so we would just run over and hang out in the cheese factory in free time. The bon bree was SO GOOD! We decided (amongst us grandkids) that if any of us ended up with a lot of extra money we'd open it back up! :)

I grew up near the Mapleton Cheese Factory and one of my happiest childhood memories was stopping by there to get some Bon Bree -- I know they made other kinds, but did anyone ever buy anything else? That was the best, and it's so nice to see people talking it about it. I was trying to describe it recently, and the closest I came was saying it had the look and consistency of Havarti with a more mild cheddar taste, but that doesn't even begin to do it justice. I was so sad to hear that it had closed. That stuff had the potential to join the greats -- it was so distinctive, and yet mild enough that everyone could like it. That and Catherine Clark's bread......ah youth!

Oh my goodness! I didn't think anyone in the world remembered Bon Bree cheese from Mapleton, WI! My mom is a devouted Bon Bree brick fan. Unfortunately the cheese is not longer made and the last cheese factory to make it in Wisconsin also closed down. It was an invention of the Mapleton cheese factory. The retired cheese maker from Mapleton cheese is the only one left that I know of with the recipe. Sad to see it disappear because it was soooo good!

Hi Peggy, thanks for that tip. Here's the link to the hostels in Canada. I have a good friend who's young at heart and uses hostels when she's traveling in Europe and she's always had good experiences.
http://www.hihostels.ca/en/home.aspx

If you're making a trip to Montreal or Quebec City
check out the "youth " hostels for inexpensive and fun housing. L'auberge is just like being in Paris in Quebec.
And you can be just young at heart to stay there.

Hi Jan, yes, check out Burlington for sure. Cabot Creameries is the proponent of Vermont Cheddar that I've heard on the radio and tv. Wisconsin should go national with its stuff. If the breweries could do it why not the farms?

Thanks for the post. The Madison comparison. So it is definitely a place to check out.

Guess I didnt know the VT cheese connection. Tho I dont think anything could compare to the Mapleton cheese factory's Bon Bree.
